Dalam kajian ini, sukun diproses menjadi tepung melalui dua kaedah iaitu A (penceluran selama 30 minit - TSA) dan B (pengubahsuaian iaitu penceluran selama 5 minit dan stim tekanan tinggi selama 30 minit - TSB).
