Hamid Ahmad, supervisor Electrical engineering Also available in printed version This study demonstrates methods used to monitor pH and temperature readings of a sugar cane juice. The purpose of monitoring pH and temperature values is to monitor the preservation process when an ultrasonic signal is applied to a sugar cane juice. This process is known as ultrasonication where ultrasonic signals will enable the sugar cane juice to preserve longer than usual. Previous studies show that ultrasonication can improve the preservation process of milks and orange juice. In order to monitor pH and temperature values, an invasive sensor for both the pH and temperature parameters are essential since it will help to monitor these values more accurately. These sensors are connected to a microcontroller before it is displayed in the computer. The microcontroller reads and translates the analog output from the sensors which is then sent to the computer for further analysis. The data is then displayed using LabVIEW where it displays the real time data. Data measured will be based on two types of sugar cane juice conditions which are fresh and stale. The pH and temperature output will be monitored for both these conditions. Thus, data displayed will determine whether or not the current condition of the sugar cane juice is preserved. This method can be applied to monitor pH and temperature values during its preservation process zulaihi UTM 87 p.
